Vegan Caesar Salad
With temperatures hitting record highs across the country, we’re looking for ways to beat the heat.
What better (and more delicious) way to do that than with fresh food? That’s why we’ve once again teamed up with Loli, a health coach and plant-based chef, whose latest recipe will provide refreshing relief on any summer day. It’s the perfect meal to bring along for outings at the beach or days at the office. Just place it in your Zip Top, unzip when you’re ready to eat, and enjoy!
Tahini Dressing
Ingredients
2 tbsp olive oil2 tbsp tahini
1 garlic clove, finely minced
1 tbsp lemon juice, optional
Directions
- Add all ingredients to a small mixing bowl and whisk to combine.
Vegan Caesar Salad
Ingredients
2 ½ cups Romaine lettuce, rinsed⅓ cup chickpeas
3 tbsp plant based cheese or 1 tbsp nutritional yeast
Sea salt, to taste
Directions
- Chop the lettuce and place it in Zip Top’s large or medium dish.
- Add half of the dressing and save the rest for later in the fridge.
- Add chickpeas and plant based cheese.
- Top with sea salt.
- Enjoy!
