Rainbow Quinoa Salad

Eating right and working out are often at the top of the list when it comes to New Year's resolutions.
With delicious salads like the Rainbow Quinoa Salad below, healthy eating habits are easier to stick with. The dressing has a kick of mustard that adds an extra tang to the vinaigrette.
Simply add all the salad ingredients below into a large Zip Top dish, mix the dressing in our small cup, then toss them together. Enjoy!
1/2 c. finely diced carrots1 15 oz. can of chickpeas
1/4 c. chopped parsley
1 c. sliced cucumbers
3 c. quinoa cooked and chilled
1 c. sliced cherry tomatoes
1/4 red onion finely diced
1 red bell pepper diced
1/2 sliced black olives
For the dressing
Juice from one lemon1/4 c. fresh olive oil
1/4 c. of balsamic vinegar
1 tbsp. of yellow mustard
